While the average consumer thinking about which stylish reusable coffee cup to buy or bemoaning with latte levy at Starbucks and Costa Coffee, it seems there is a bigger coffee issue that we need to consider… Climate Change

Can the coffee bean survive climate change and will it become the new gold of the future as coffee as the climate collides?

Threaten The Coffee Bean Industry. 

As the worlds climate change is rampaging uncontrolled through the world and Brazil, one of the major coffee bean producing countries is suffering too. With the demand for coffee increasing and land being decimated leaving it unsuitable for coffee growth we could find by 2025 we have a net shortfall of over 180 million bags of coffee.

While Australia has never had a massive reputation in the coffee world, it could be the saving force in this global coffee problem. Currently, testing of 20 new varieties of coffee bean that is said to be resistant to climate change and will thrive in challenging conditions. This is great news for the coffee industry and could prove to be the much-needed solution, but will require other areas to come on board and use these climate change resistant beans to develop coffee crops in other locations. If this problem can be solved successfully, we can avoid a situation where globally we face a coffee shortage and prices creep up and up, bringing the value of coffee inline with gold.

Picking the Perfect Bean. 

 

While there are endless options, blends and roasting on the market and we are truly spoilt for choice and confused at the same time. The latest new research reveals that 89% of UK office workers credit high-quality coffee for making them more engaged at work.

If you rely on a strong cup of coffee on the morning to get you going in the office, you are not alone. Up to nine in ten (89%) workers credit high quality coffee for making them more engaged at work, new research has found. The study, conducted by Nespresso and ComRes in the UK and Ireland also found that 75% of office workers agree that good quality coffee in the office suggests their employer cares about their wellbeing.

Coffee has actually proved itself vital in helping employees feel valued. In fact, the research shows that 75% of workers across the UK and Ireland feel high quality coffee in the office shows their wellbeing matters to their employer, and almost three quarters (71%) of employees would recommend their office as a good place to work because of access to high quality coffee.

Coffee also appears to be a vital social lubricant in an office environment, and office breaks can improve collaboration within and between teams, helping employees work smarter. Of those surveyed, 81% said that coffee breaks help them to build stronger relationships with their colleagues, and 72% with their managers. Surprisingly, despite the stimulant effect of caused by the caffeine in good coffee, over than four in five (84%) employees in companies with over 20 employees report that coffee breaks help to relieve stress, with this number highest among the financial and creative industries.

Anecdotally, it has always been clear that employees valued the complimentary coffee and tea often offered in the workplace; but the findings highlight how cheap instant coffee might not cut it in modern workplaces anymore. More than three quarters (77%) of employees across sectors think good quality coffee in the office is important for clients and visitors as well as staff, with over a third of employees (36%) in senior management positions assessing the quality of a company by its coffee.

Francisco Nogueira, Managing Director for Nespresso in the UK and Ireland said: “With 88% of employees in the UK and Ireland saying soft perks are crucial in retaining good staff, we know those little extras can make a significant impact on the way employees feel and act at work. Robusta Or Arabica Coffee?

So whats really the difference you ask with so many coffee bags and types within the UK coffee shops and coffee suppliers. With over 100 coffee species, there are two main ones that are widely produced: Coffea Arabica (Arabica)  and Coffea Canephora (Robusta). At So Pure, our roasted bean Essenza comes from 25% Robusta Bean, 75% Arabica Bean from Brazil, creating sweet fruity flavour and roasted in our factory in traditional Probat drums allowing the full flavours to increase.

So whats the difference between Robusta and Arabica?

So some facts between the two coffee bean.

One.
Location Location Location

Estimates that 75% of the world’s coffee production is Arabica, about 25% being Robusta. Brazil is the most significant Arabica producer and Vietnam produces the most Robusta, with exports total 1.55 million metric tons in 2018, with output is set to rise about 4.5% in 2017-18: Trade Minister°

Two.
Caffeine

Robust bean has more caffeine compared to Arabica. Which may sound like a positive thing but caffeine carries a bitter taste which makes it an unpleasant drink. The Robusta bean has 2.7% caffeine content, almost double the 1.5% of Arabica.

Three.
Shape

Robusta beans are much more circular, whereas Arabica is more oval.

Bean Count

On average it takes around 42 coffee beans to make an espresso.

Five.
Coffee Plant Content

The Arabica coffee plant is a self-pollinating plant, meaning the plant will have fewer mutations and fewer variations throughout its life cycle as compared to Robusta coffee plant.

Six.
Sugar Content

Sugar plays an important role in any coffee roasting process, creating and releasing those aromatic coffee textures and body of the coffee. Arabica contains almost 60% more lipids and almost twice the concentration of sugars than robusta.

What Is Crema?

Crema is a flavorful, aromatic, reddish-brown froth that rests on top of a shot of espresso. It is formed when air bubbles combine with fine-ground coffee’s soluble oils. Some people refer to this as the “Guinness effect” because it mimics the head on a pour of the popular Irish stout.

The strong presence of crema in an espresso shot indicates a quality, well-ground coffee and a skilled barista (professional coffee maker). Crema helps give espresso a fuller flavour and longer aftertaste than drip coffee.

What
Is The Perfect Crema?

Baristas and coffee makers around the world have different opinions about what they consider to be the perfect crema. The goal is to pull a shot of espresso with a crema that is not too thick, nor too thin, and one that lingers for about two minutes.

Troubleshooting crema can become complicated, but here are a few things to keep in mind.

  • Over-extraction, under-extraction and the coarseness of your grind will affect crema.
  • If your crema “drops” (goes away) after less than one minute, then the extraction was too fast or the coffee roast too light.
  • An extraction from a quality espresso machine should take between 15 and 30 seconds, though this may vary from one machine to another.
  • Remember to allow your machine to warm up before pulling a shot and clean the machine regularly to ensure it continues to work properly, also a dirty coffee machine will also contribute a bitterness to your espresso.

That Affect Crema

You may not be in complete control over your espresso’s crema. Beyond perfecting the technique of pulling a shot, crema can be affected by the following factors.

How
Freshly Roasted Are Your Beans?

Fresh roasted beans form more crema on espresso. This is because the coffee bean oils are still out-gassing from the roasting process. At So Pure our Essenza roasted bean, sun-dried and roasted three ways to perfection creating a sweet fruity flavour and roasted in our factory in traditional Probat drums allowing the full flavours to increase. Unique to So Pure, the Essenza roasted bean is a blend of Central America, Brazil and Robusta from Indonesia, crafted to create that crema and taste.

How
Dark Are Your Beans?

In general, the darker the bean, the less crema you will have. This is due to the oils rubbing off while handling, packaging and grinding. Then again, a very light roast is not known to produce an ideal crema, either. Many coffee companies offer an espresso roast, which should have the perfect amount of oils or a defining one type of roasted bean which is a blend of various offering you an ideal crema and textures combined.

Were The Beans Processed?

Naturally-processed beans will often produce the best crema because more of those oils are left intact. Which is why our  Essenza roasted bean are picked perfectly ripe and then laid to rest in the sun to dry creating a sweet fruity flavour.

How
Does Your Espresso Machines Pull A Shot?

Many espresso machines sold use automatic controls. While this is convenient, the process can limit the formation of crema compared to a manually pulled shot. Some automatic machines try to make up for this by creating an imitation crema but really 9 bar pressure is truly needed to create crema.

Is
Crema Really That Important?

While it can seem that a good crema is the definition of a perfect cup of espresso, it is not as critical as some make it out to be. It does add to an espresso’s flavour and is desired. Yet, its absolutely possible to have a great tasting cup of espresso without the perfect crema.

After all, espresso is about the taste, right? If you enjoy your cup, that’s really all that matters. Don’t get the crema blues or think that you somehow failed at your attempts to pull a good shot.
